Smoked Chili

Enjoy this original recipe from Townley Pool & Spa! We cooked this incredible chili on a Big Green Egg, right at the store. Stop by for more  info on just how easy it is to cook on an EGG! And, did we mention, delicious?

 Ingredients

  • 1 pound dried beans – soaked overnight
  • 1 onion diced
  • 3 peppers diced (green, red and yellow)
  • 1 can Rotel
  • 1 can green enchilada sauce
  • 1 can diced tomatoes

Instructions

Stir first six ingredients together in a dutch oven.

Ingredients

  • 1 ½ pounds ground beef
  • Chili powder
  • Cumin
  • Onion – granulated
  • Garlic – granulated
  • Paprika

Instructions

Make these ingredients into a patty. Cover with lattice of bacon. Smoke meat over top of the dutch oven at 300◦ until the meat hits 155◦. Crumble meat into chili mixture. Smoke 30 more minutes.
