Traditional Brunswick Stew

Ingredients

  • 1 1/2 pounds smoked pulled pork, or chicken, or a combination of both
  • 4 tablespoons butter
  • 3 cloves garlic, minced
  • 1 large yellow onion, finely chopped
  • 1 15-ounce can fire-roasted or plain tomatoes (undrained)
  • 4 cups chicken stock
  • 1 1/2 cups barbecue sauce of your choice
  • 1 tablespoon of brown sugar
  • 1/4 teaspoon cayenne pepper
  • 8 ounces frozen corn
  • 8 ounces frozen lima beans
  • Salt and pepper, to taste

Directions

  1. Set the EGG for indirect cooking with a convEGGtor at 300°F/149°C with the Big Green Egg Cast Iron Dutch Oven in the EGG to preheat
  2. Melt butter in a large Dutch oven over medium-high heat
  3. Once melted, add the garlic and onions and sauté until soft, about 5 minutes
  4. Stir in the tomatoes, chicken stock, barbecue sauce, brown sugar, cayenne, pork and/or chicken, lima beans, corn, and salt and pepper
  5. Bring the mixture to a boil, then reduce to a simmer and cook over medium-low heat for 1 1/2 hours, stirring occasionally
  6. Serve with cornbread or biscuits
