Traditional Brunswick Stew
Enjoy the smoky flavors of Traditional Brunswick Stew cooked on the Big Green Egg. This hearty, flavorful stew combines tender meats and fresh vegetables for a comforting, slow-cooked meal.
Ingredients
- 1 1/2 pounds smoked pulled pork, or chicken, or a combination of both
- 4 tablespoons butter
- 3 cloves garlic, minced
- 1 large yellow onion, finely chopped
- 1 15-ounce can fire-roasted or plain tomatoes (undrained)
- 4 cups chicken stock
- 1 1/2 cups barbecue sauce of your choice
- 1 tablespoon of brown sugar
- 1/4 teaspoon cayenne pepper
- 8 ounces frozen corn
- 8 ounces frozen lima beans
- Salt and pepper, to taste

Directions
- Set the EGG for indirect cooking with a convEGGtor at 300°F/149°C with the Big Green Egg Cast Iron Dutch Oven in the EGG to preheat
- Melt butter in a large Dutch oven over medium-high heat
- Once melted, add the garlic and onions and sauté until soft, about 5 minutes
- Stir in the tomatoes, chicken stock, barbecue sauce, brown sugar, cayenne, pork and/or chicken, lima beans, corn, and salt and pepper
- Bring the mixture to a boil, then reduce to a simmer and cook over medium-low heat for 1 1/2 hours, stirring occasionally
- Serve with cornbread or biscuits
