Fried Chicken on the Big Green Egg
There’s nothing quite like fried chicken. Smoke it first on the Big Green Egg, and it immediately tastes better! Check out our recipe below.
Ingredients
- Chicken (buy enough for the number of people you are serving
- 2 cups all-purpose flour
- 1-1½ tablespoons kosher salt
- 1-2 tablespoons ground pepper
- ½ tablespoon granulated garlic (not garlic powder)
- 1-2 tablespoons paprika
- Two eggs
- Four cups buttermilk
- Cooking oil
Instructions for Fried Chicken
Set your Big Green Egg to 220 degrees using indirect heat. Add your favorite smoking woods for extra flavor.
Mix the five dry ingredients to create your batter. You can adjust seasonings to your taste. In addition, if you are cooking loads of chicken, you may want to double the batter. This is enough ingredients for a whole chicken.
Set batter aside.
Trim your chicken and season with salt and pepper. Smoke the chicken in your EGG for about two hours. Heat to 165 degrees internally to be sure they’re done. Take the chicken off the EGG and set aside.
Whisk eggs and buttermilk in a large mixing bowl. Drop your cooked chicken into the buttermilk and let it soak for 20 minutes.
Heat a quart of cooking oil to 400 degrees. Do this in a large stock pot or a deep fryer.
Take each piece of chicken out of the buttermilk and coat it in your batter. Then fry the pieces until golden brown for about five-10 minutes. Remove pieces with a slotted spoon so oils drips off. Place them on paper towels on top of a wire rack on top of a baking sheet to catch oil.
