Do you love pizza? At Townley Pool and Spa, we can safely say we all do! And we especially love it on the Big Green Egg. We also love the pizza wedge, and here’s how to use it.
What is the Big Green Egg Pizza Wedge?
The Pizza Wedge transforms your Big Green Egg into a full-fledged, wood-fired-style pizza oven – no delivery required. Whether you’re making Neapolitan pies, Detroit deep-dish, or flatbreads with fire-kissed edges, the Pizza Wedge helps you do it all with speed, precision, and pure flavor.
It gives you full visibility into your cook without lifting the dome while keeping temperatures consistent and airflow optimized. The result? Crispy crusts, melty cheese, and beautifully blistered toppings every single time.
Here’s how to use it:
Step One: Light the Charcoal
Start your Egg and set it up for indirect cooking using the convEGGtor. Place your cooking grid over the convEGGtor.
Step Two: Add the Pizza Stone
Place your baking stone directly on the grid and close the dome.
Step Three: Heat It Up
Open the draft door and rEGGulator cap fully to bring the Egg up to 500–600°F (260–315°C). Let the stone preheat for at least 20–30 minutes for the best crust results.
Step Four: Insert the Pizza Wedge
Once preheated:
- Carefully open the dome.
- Insert one wedge on each side of the Egg, skinny sides pointing back.
- Ensure the rear tabs rest on the gasket. The two wedges should meet cleanly in the back for a snug, centered fit.
- Lower the dome gently to rest on top of the wedge.
Cooking with the Pizza Wedge
Once everything is in place and up to temp:
- Slide in your pizza using a peel.
- Bake time: Typically 5–7 minutes, depending on thickness and toppings.
- Use the open-front design to visually monitor bubbling cheese, blistering crust, and golden edges.
You can rotate the pizza halfway through for even browning if needed.

Pro Tips
- Don’t overload your toppings. Less is more for crisp crusts.
- Dust your peel with cornmeal or semolina to prevent sticking.
- Let the dough come to room temperature before shaping for easier stretching.
- For Detroit-style or deep-dish, use a cast-iron pan placed on the stone.
Cleaning & Care
- Let the Pizza Wedge cool completely before handling.
- Hand wash only using warm water and mild detergent.
- Do not use the dishwasher.
Storage & Safety
- Always use high-temp gloves when adjusting or removing the Pizza Wedge while hot.
- Place on a trivet or heat-resistant surface to cool after use.
- Store indoors to prolong life.
