Fire up your Big Green Egg for these flavorful Halloumi veggie skewers featuring zucchini, peppers, and red onion. Grilled to perfection in just 10 minutes, they’re ideal for summer gatherings!

Ingredients

  • 2 blocks of halloumi cheese, sliced into 1-inch thick cubes
  • 2 zucchini, sliced into 1/2 thick slices
  • 2 red bell peppers, sliced into 1-inch thick pieces
  • 1 large red onion, quartered
  • 3 tablespoons garlic oil
  • Salt & pepper, to taste
  • 2 teaspoons oregano
  • Fresh basil, to garnish
  • 12 wooden skewers, soaked in water

Directions

  • Preheat the Big Green Egg for direct grilling to 425°F (218°C) degrees. Skewer on halloumi cheese, zucchini, pepper & onion. Repeat with the remaining skewers.
  • Drizzle skewers with oil. Season with salt, pepper & oregano.
  • Place skewers on the grill & cook with the lid down until charred on each side, about 2 to 3 minutes per side.
  • Transfer to a serving plate & garnish with fresh basil. Serve warm!
